Here is the recipe for Spanish rice

I thought I posted it earlier, but……who wants to go that far back!

3 T. olive oil
1 medium onion chopped

1 clove garlic minced
1 green pepper chopped seeded

1 c. long grain rice (white)
2 c. boiling water
2 t. chicken broth granules

2 T. tomato paste
1/2 t. cumin

Saute onion, garlic and green pepper until limp in oil add rice and brown until lightly browned.

Mix rest of ingredients and add to pan.

Cover and cook 20-25 min Add browned ground meat or chicken if you want. I will sometimes before simmering it set some chicken breasts into it or like I did the night the lid broke, brown chunks of them before you brown the rice.
