I made this soup….I have not made it in forever, like 11 years, I am thinking!!! It is one of those soups though that is so good! I had to change a couple of things as I did not have them, as I still have not made it to the store to get celery! I also was choked up at paying $4 for less than a cup of wild rice, so I bought a package or brown and wild rice pilaf mix for $1 and it worked good! The best thing was that F. really liked it! I also had no cream or half and half, so I used the butter in it, but just skim milk instead of the cream and it was still really rich tasting because of the butter.

Wild Rice soup

Cook your Wild rice so you have 3 c. cooked

1 c. diced ham

1 c. diced onion (I skipped as I did not have it and used onion powder)

1 c. diced celery
1 diced carrot

1/2 c. butter

8 c. chicken broth

1 c. flour

salt and pepper to taste
1/2 c. cream or half and half

Cook your Wild rice, in kettle melt butter and cook your diced vegetables until tender in there. Add ham. Add flour. Don’t let it brown. Slowly add your chicken broth and cook until thickened. Add cooked wild rice. Taste for seasonings. Add cream and reheat. Do not let it boil.

    Soup sounds so good right now! It's so cold and rainy…it's those times that you just want to curl up with a bowl of soup and let it warm you up!
