The week of soup continues with :

Beef Stew

Sky High Biscuits

Homemade Plum jam

It was really good and filling.

Recipes are as follows:

Beef Stew

1 lb round steak cubed

1/4 c. flour

2 garlic cloves

Oil

8 potatoes cubed

5 carrots sliced

(I like to use celery in it, but I had none)

Salt, pepper

1 t.  beef bouillon

Water

In a heavy  6 quart pan heat a bit of oil and add the finely minced garlic and beef that has been tossed with flour. Brown until well browned and the flour is a bit crispy. Add some water enough to cover the beef.  Simmer for about 20 minutes  Add The cubed potatoes, sliced carrots and celery if you like as well as salt, pepper and the beef boullion. Add water to cover and simmer on very low, for an hour or 2. (I did it this morning for about an hour and half.) Taste for salt.  Mix 1/3 c. flour and 2/3 c. water until no lumps. Mix  into hot stew and stir until thickened.

Sky High Biscuits

I got this recipe from my good friend Kathy, who usually was in a hurry and would just plop them instead of rolling them out! They taste good both ways!

3 c. flour (you can use part whole wheat if you want)

1 T. sugar

4 1/2 t. baking powder

3/4 t. cream of tartar

1/2 t. salt

3/4 c. butter
1 egg

1 c. milk

Mix dry ingredients. Cut in butter until very small. Add the egg and milk. Mix well and knead 10 times. Roll out and cut into biscuits. Bake at 450 for 10-13 min.

The homemade plum jam was perfect on them! It tasted wonderful!
