Wednesday: Chicken, noodles, tomato salad
Thursday: Corned beef, boiled potatoes, salad
Friday: Potato hash, tomato salad, cut up cucumbers
Saturday: Birthday party potluck- I brought banana bread and caramel corn. I used Black walnut flavoring and vanilla…it was so good!
Sunday: Russian Thanksgiving service- meal at church!
Monday: Wild rice soup, grilled sandwiches
Tuesday: Book Club- Roasted red pepper dip, Tomato basil pizza, Bruschetta on toasted bread

Tomato-Basil Squares (From friend on MOMYS)

Homemade pizza dough
2 cups shredded mozzarella cheese, divided
1/4 cup fresh parmesan cheese
2 tablespoons fresh basil leaves (I use more because I love the basil)
2/3 cup mayonnaise ( may cut this down a bit)
1 clove garlic pressed (I use more of this too-usually two to three cloves)
4 tomatoes thinly sliced (you may need more or less depending on the size of your tomatoes)

Preheat oven to 375 degrees. Roll out dough into a square. Sprinkle crust with 1 cup of mozzarella cheese, set aside. Grate parmesan into a bowl, add basil torn into small pieces. Add remaining mozzarella cheese, basil and mayonnaise. Mix well. Slice tomatoes and arrange in a single layer over mozzarella on pizza crust. Scoop mozzarella cheese mixture over tomatoes, spread to cover evenly. I usually decorate with a couple of whole basil leaves in the center. Bake 15-20 minutes or until top is golden brown and bubbly. I cut these into pretty small squares when serving to a gathering-almost bite sized. The recipe says serve warm, but the taste good at room temperature too.
