Have any of you ever wanted a recipe for Lemon Poppy seed cake, bread or muffins?

Well, I did. I wanted a recipe from scratch that was really easy, tasted good and did not ask for a mix. I thought after being a subscriber to Taste of Home magazine for many years that maybe I should write to there “Does Anyone have…?” section.

I did one day and then I went on a trip to Montana. At this time we shared a P.O box with about 5 other families or so. One day I recieve a phone call and was told, “You got 50 letters today!” I was in shock and could not think of what on earth happened! I remembered suddenly my letter and when I came home, low and behold there was so many letters and cards it took me literally weeks and months to open them! I got ones for probably a year or longer! I never counted, but you know, if anyone ever longs for anything poppy seed, lemon or other, I may just have the solution to your problem!

Anyhow, tonight I made some Lemon Poppy seed loaves to take to a Tea party for our bible study group tomorrow. I hope it turned out! I have tried the recipes, but there are so many I cannot remember which ones I have tried and which I have not!

Here is the recipe I made

Poppy Seed Bread

3 c. Flour

2 1/2 c. sugar 1 t. salt

1 1/2 t baking powder 1 1/2 t lemon extract

1 1/2 t almond extract or vanilla

1 c. oil 1 1/2 c. milk

3 eggs 1 T poppy seeds 1/4 t lemon or orange rind

Mix all together. Bake at 350 in for one hour in 2 greased loaf pans or until toothpick comes out clean. (Grease loaf pans with shortening if you want them to come out whole and set them on a wet towel for a few minutes before trying to remove them) When they are on the cooling racks mix in a cup 1/4 c. lemon juice and 1/4 c. sugar and drizzle over tops of loaves. You can poke holes with a skewer to get the liquid to go through and flavor it more throughly.
