Making your own dinner does not have to be hard!
It can be much cheaper and kind of fun….
Here are some simple recipes that served with a salad can be easy to make in less than 30-40 minutes.
Not all terribly healthy, but they work!

Cheeseburger and Fries casserole

1 bag french fries-  You can get these at Smiths for about $1.20
1 lb. ground beef, browned and drained
1 1/2 c. milk
1 1/2 T. cornstarch
salt and pepper
1 1/2 c. grated sharp cheddar cheese

In a glass bowl mix the milk and cornstarch together. Heat in microwave, stirring often. Cook about 2-3 minutes or until thickened. Add cheese and salt and pepper to taste.
In 9x 13 in baking dish mix browned ground beef and cheesy sauce together. Top with bag of french fries. Bake in oven at 400 degrees until fries are browned and crispy, about 30 minutes.

Simple Enchiladas

1 bag of tortillas
1 can enchilada sauce
1 bag (8oz) grated cheese
2 cups cooked meat (You can buy those packages of boneless chicken breasts and cube some and brown them in  a pan, or brown ground beef. You can even use leftover Rotisserie chicken from the store)

Heat tortillas in microwave 1 minute, wrapped in a towel.
In a 9×9 pan pour about 1/4 c. enchilada sauce in bottom of pan. In each  tortilla place a spoon of meat and sprinkle well with cheese. Roll up and place in pan. Do this until pan is full.  Pour remainder  of can of enchilada sauce over rolls in pan. Top with more grated cheese. Bake in oven at 350 degrees, until sauce is bubbly, about 20-30 minutes. Or you can bake in the microwave at 50% power for 10-15 minutes. i like to do this in the summer when it is hot. These are not authentic, but they are fast and easy. You can also make them with beans and cheese or just cheese.

Taco salad
1 bag of romaine lettuce from store (or you can buy a head of lettuce and rip it up yourself and wash it)
1c. grated cheese
1 can black or pinto beans, drained and rinsed
1 diced tomato
1 diced green pepper
Salsa
sour cream
Tortilla chips

Mix the first five ingredients together. Set the others on the table. You can mix the sour cream and salsa together for a dressing if you want, or let people do it themselves. You can also add cooked meat to this if you like.

    Just wanted to give you another idea with the enchiladas…you can just cut up tortillas and layer like a casserole. I cut up tortillas and mix with sauce cheese and meat, then put it in the dish and top with more sauce and cheese. It makes it really easy! =)
