So, I think I will make some! I had a busy day, well two days….setting up and manning a busy used curriculum sale, and I am exhausted!
But pudding sounds really good and I have not been hungry much…..
CREAMY TAPIOCA PUDDING
Martha Artyomenko
5 c. milk
10 Tbsp. pearl tapioca
2 eggs
2/3 c. sugar
1 tsp. salt
2 tsp. vanilla
In microwave (you can do on stove top, but I like the microwave so it doesn’t burn), heat
milk until hot (about 5 minutes). Add tapioca; cook 15 minutes, stirring often. In
another container beat eggs, sugar, salt and vanilla. Add about 1 c. hot mixture to egg
mixture beating all the while, then add egg mixture back into milk. Bring up to a boil
again, stirring often. This will not look very thick, but as it cools it will thicken. Set pan
or bowl in a pan of ice and water to cool for a while before refrigerating.
