For the soup-
1 stick butter (I do not think I used all of this!)
1 c. chopped onion
10 c. sliced zucchini (this is nice for the big ones)
1 c. diced celery
1 T. parsley
1 t. garlic powder
1/2 t. basil
2 c. chicken broth
Cook the onion in the butter for a bit, add rest of ingredients. Cook until soft. When soft, blend in blender carefully. if you have an immersion blender it would be great for this, but I use a regular one. it is hot so be careful so you do no burn yourself, it is easy to do! When all is blended reheat if needed/ Serve with grated cheese if wanted and croutons on top.
We used to freeze this in little bags and eat for lunch sometimes later in the winter, but we also ate it alot in the summer. it is wonderful soup and not too heavy!
I forgot to buy celery and milk at the store today so back to the store I go! I kind of spent alot this week on groceries, but her is hoping, if the rebates actually work like they are supposed to, I should get $30 in rebates back in the mail. $10 from Kelloggs for cereal that I only paid $10 for, well actually, I paid $9 for 10 boxes of cereal as I had a coupon off two boxes and then they are supposed to send me a $10 check. Then at Albertsons this week, if you spend $25 worth of Kraft stuff, which for me, was cheese, they give you a $5 off your next shopping trip right away and then they are supposed to send you $20 check in the mail. I sent it off so we will see if I get my checks. Otherwise I paid alot for cheese and we will be skrimping other places!
So, still need celery and milk….celery and milk and ignore other specials!!
Oh, our Albertson's has the same deals! I had a few coupons last week and will end up paying about $5 out of pocket for the Kellogg's stuff. Oh, and I got Breyer's ice cream with a coupon and the $15 back on $30 purchase from Albertson's last week! Good deal!! :) I saw the ad for this week and was thinking that $25 back on $25 of groceries was sounding too good to be true but I'll try it! haha ;)
