I guess I should take a picture…..but I really want it to go away! I am scared for my tomato plants!
Yes, while it is in the 100 degree marks in eastern USA, it is snowing in NW Montana today! I think  everything is very confused! <p> We are staying warm by baking muffins this morning and drying clothes!
I made these muffins this morning<p>
Carrot Pineapple Muffins
3 c. flour
1 grated carrot
1 T. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 t. cinnamon
2 eggs
10 T butter
1 c. sugar (I used 1/2 c.)
1/2 c. well drained crushed pineapple
1 1/2 c. plain yogurt (or whatever flavor you have, i have used sour milk before too, if I did not want to use up yogurt, but in this case I found a container in the back of the fridge that needed to be used)

Beat butter and sugar together. Add eggs one at a time. Add pineapple and carrot. Mix dry ingredients together.  Add half of dry ingredients to mixture. Mix until combined. Add 1/3 yogurt. Add half of the flour again and mix well. Repeat until it is all gone. Bake in muffin pans without liners. You can also top with cinnamon sugar mixture if you want.  When you bake them without liners they rise higher, so if you need liners, you can use them! <p>
They were good and did the trick of heating up the house. I put some in the freezer too for later as I doubled the recipe and I think I am going to try to do more of that as I feel like i am always running behind when it comes to my eaters lately! <p> Last night we had a $20 gift card at a place to eat in town. We went there, but I knew we could not all eat for that. We ended up getting, a bowl of soup, a adult meal, 3 children’s meals and a side of fries. It was still over what we had, but it ended up they all came home still pretty hungry. One of the boys had pancakes and bacon and so when I came home, I make blender pancakes in my new Bosch blender. Wow! They were good, they were easy and it was really weird to start with wheat kernels in the blender and end up with pancakes and no flour (just the wheat!). Anyhow, after a meal of those, besides what they ate earlier, I was so tired! All I had eaten was  the small bowl of soup, so I made a salad. I couldn’t justify buying a salad when I had makings for a wonderful salad at home. <p>

    Crazy weather we are having. It is funny to watch the snow level drop back down on the hills. Not great weather for my son's baseball games.
