Life gets so hard when someone is sick! Anthony has been sick and had a fever for the past few days and it is tough. Yesterday I took him to the doctor as he had a high fever for over three days. He was also starting to get dehydrated. I finally got him to take some liquid and food yesterday, but he still is not taking much in. I guess he has an ear infection and the start of a second one. The poor guy woke up last night screaming in pain a couple times! It was awful! I finally gave him Tylonal so he could sleep.
Last night I made a really easy favorite of ours for dinner. Biscuits and gravy and then I stir fried some broccoli with leftover mushrooms and garlic for the side dish. The gravy is really simple, I cook a pound of sausage and add flour to it, then stir in slowly milk. Cook until thick, add some salt and pepper to taste. We were all very full and it is cheap besides! We also like this over mashed potatoes.
What is your favorite easy dinner?
I like to take canned potato soup reconstituted with milk and brown some sausage to add in. Then I add a handful of shredded cheddar cheese along with some salt and pepper. This is good with crackers or cornbread. I’ve been told it’s as good as homemade and cheap!
We also like chicken and noodles. I’ll take a handful of shredded chicken and add to a few packs of seasoned chicken flavored noodles. Sometimes I add some frozen peas and/ or corn. I have done it with just egg noodles cooked with a few chicken bouillon cubes.
We love gravy and biscuits!

Dh’s favorite is linguine with alfredo sauce:
1/2 c. butter
1/2 c. heavy cream
3/4 c. grated parmesan (shredded is more like it)
white pepper to taste
Heat all on low in small, heavy-bottom saucepan until cheese is completely melted into sauce. Whisk often.
I serve this with linguine and either diced chicken or marinated, grilled shrimp. Or you can leave out any meat and add in chopped, cooked spinach. Mmmmm…
Dh LOVES it when I cook some canelloni noodles, stuff with seasoned diced chicken (already cooked), mozzarella cheese, and a little chopped spinach. Place in a greased 9×13 dish, top with alfredo sauce, bake at 350 for 25-30 minutes.
Easy, but definitely not healthy!!!
I pray Anthony is feeling better soon! Is he teething? The hard part of motherhood.
