I made a potato sausage soup last night that was really good! It was easy too.

I cooked 8 potatoes cubed covered in water,

Meanwhile in frying pan brown 1/2 pound bulk sausage and 1/2 onion finely diced. When sausage is almost done add 2-3 cloves garlic pressed through garlic press. Cook until sausage is done and garlic is cooked Remove from heat, drain.

Add about 2 t. chicken bouillon to water that potatoes are cooking in and cook until tender. (I used Vegeta)

Add Sausage mixture. Use a potato masher and break up the chunks of potato.

Add about 1 c. milk If soup needs to be thicker add a little flour with the milk mixed until smooth beforehand. Add salt and pepper to taste.

It was really good and very filling! Everyone really liked it. I served it with homemade oatmeal bread and cheese slices.

Mmmmm…sounds delicious! But if I am to be convinced that it is as good as you say it is, I must insist that you come over and cook me a batch…Oh and don’t forget the homemade oatmeal bread and cheese slices (I want to fully experience your meal). ;-)

    Love,
