Tuesday:  Beef Stew, biscuits<p> I also on Monday have to make a main dish for mops, some sort of egg, potato dish or quiche…..not sure exactly yet.  I may have to buy some more eggs for that. <p> I thought about making this one<p>
CRUSTLESS VEGETABLE QUICHE 4

5 eggs
1/2 c. nonfat or 1% milk (or rice milk)
12 oz. (3/4 c.) nonfat or low-fat cottage cheese
1/2 c. grated part-skim mozzarella cheese
10 oz. frozen chopped broccoli, thawed and squeezed to drain
10 oz. frozen chopped spinach, thawed and squeezed to drain
1 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. fresh ground pepper
1/8 – 1/4 c. chopped red or white onion (opt.)
Beat eggs in a medium-sized bowl.  Add milk and beat some more.  Add remaining
ingredients and stir vigorously to blend.  Pour into a deep, lightly oiled casserole, and
place the casserole dish in a 9×13" pan filled part way with hot water.  Bake at 375
degrees for about 35-45 minutes, or until a knife, inserted into quiche, comes out clean.
NOTES:
High altitude cook 45-60 minutes. 190 calories per serving.<p> I would leave out the onions though, I am not that fond of eggs so I would not know if this would be good or not! Any opinions?
