I have not felt there ws much newsworthy going on around here lately! It has all been nice and peaceful….except when the boys are practicing their hand stands on the living room floor, leaping off the bunk bed onto their trampoline, begging for food every few minutes it seems. We started making it so no snacking after dinner and making Paul fill up on dinner. Sometimes I will let him have a little snack, but sometimes we eat dinner at 6:30 or 7 and bedtime is at 8:30 so they want to eat before bed and it makes no sense!
I got a favorite recipe of mine that I have not made in a long time, but am looking forward to it. I bought one of those big sacks of garlic at Costco so I have enough garlic! It has potatoes cooked in it, but I was thinking how you could vary it and leave them out, and add some soy sauce and serve with cooked rice.
Honey Garlic Chicken
12 pieces chicken (legs and thighs, but you can use whatever), 6 potatoes peeled and chunked
12 garlic cloves, unpeeled
1/4 c. butter melted 1 t salt
Place chicken, potatoes and garlic in roaster pan
Drizzle butter over top and sprinkle salt
Bake at 400 for 40 minutes basting frequently with pan juices
Drizzle 1/4 c. honey over top of chicken
Bake 20 more minutes or until chicken is done
We enjoyed making this dish alot when we were poor and legs and thighs were really cheap! It is really good! Serve with bread and then press the garlic out of the skin onto a slice of bread or over your chicken and potatoes! It is wonderful!

Mmmmm….sounds like it would be delicious over rice! I will definitely have to try this recipe. I love everything garlic and the kids love everything honey…and my picky dh will just be happy to try something new that is not too “out-there”.
And my boys are exactly the same way. It doesn’t matter how late they ate supper, they are always begging for a snack (usually a bowl of cereal) before bed. The key is making them say something BEFORE they are actually climbing into bed!
