This was one of our favorite cakes growing up! We used to sometimes eat this one and a gingerbread cake for breakfast with milk over it. The gingerbread cake was all whole wheat with only molasses to sweeten it. There are alot of beets in this cake, but even people who do not like beets have liked this cake and we always found it was fun to make it and then make people guess what was in it. They usually have no clue!

Red beet cake.

Cream: 5 eggs 1 1/2 c. sugar

Add: 1 1/2 c. oil
2 1/4 c. grated cooked red beets
1/2 c. cocoa

Mix in: 2 1/2 c. flour +2 T flour
dash salt

2 t. vanilla
2 1/4 t. soda

Beat well until bubbles form on surface. Batter will be slightly thin.

This makes a bit of a larger pan than a 9x 13 and it is very tall. You could
probably put it in a 9 x 13 and a small round.

  Bake at 400 for 40 min for
large oblong or until center springs back on smaller pans. (I cannot
remember if I bake it at that hot of temperature or not)

    Can you taste the beets? Growing up my parents *loved* beets. Yuck! ;P I would like to make it and see people’s responses to it and what it was made of. I have a friend who is a chocolare lover and does not like beets. Hmmmm…:o)

    I cannot taste the beets at all! It is just a really moist chocolate cake. I would try it. I would frost it like any other cake and see if they notice. I think I have had one person notice, but they were not even sure!

    I would still have to not tell my husband the name of the cake…lol! He absolutely hates beets. The thought of them gives him the willies.
