This week, we got some things piled up. My brother has been staying with us, and my son who has been going to someone’s house for school, was home all week. We had two classes on top of swimming lessons and I had some other things too….
<p> It has been one thing after another! I am trying to stay calm and keep up, but the house is not the cleanest! On Wednesday, I  also had my niece and nephew….<p>
Tonight I remembered after running around all day, figuring out all this money, paperwork stuff, picking up  documents, that I was supposed to make dinner for someone. I  threw together this chicken and rice disha nd I wrote it down so I can make it again as it tasted good!

<p> I cooked 1.5 c. of rice with a clove of garlic minced  in chicken broth and about 1 c. of cooked chicken breast.  When it was cooked through. I had in the microwave heated 1/2 pkg of carrots, broccoli and water chestnuts up in some leftover cream soup and water to thin it out. When it was hot, I added pepper, onion powder and some sour cream. Then I stirred the cooked rice and chicken in. That was it. It was really good and it was sort of sad to let it go out the door! = ) But they needed it!

Menu for the week:
Wednesday: Chicken noodle soup with homemade noodles and Cheesey/onion whole bread ring
Thursday: French Dip and leftover soup
Friday: Chef Salad, french bread
Saturday: Roast in crockpot with potatoes, carrots, steamed vegetables
Sunday:  Leftovers, popcorn
Monday: Crockpot Italian chicken, pasta, salad
Tuesday: Wild Rice soup, biscuits<p> Tomorrow, there is nothing on the day other than a normal school day. I am looking forward to hanging out and not doing much, maybe I will take a walk if it is as nice as it has been! Saturday, soccer starts, so it might be crazy again! Plus  there are three birthdays this weekend too…..
