Are you wondering what to do with all that zucchini you have growing in your garden? You may already do zucchini bread, cake and all that….but here is one of my favorite soups.
It freezes well, and is simple to make.
My plants have gotten tall and in spite of wind storms, hail etc. They are still persevering and producing massive zucchinis!
Zucchini Soup

3 large zucchinis cut up in slices
1 pkg. celery stalks diced
1/2 c. butter
2 qt. chicken broth or vegetable broth
1/4 c. parsley (dried)
2 t. basil (dry)
salt and pepper to taste
Melt butter. Add celery. When celery is tender, add  the rest of the ingredients. Cover and cook until zucchini is softened. Blend in blender in batches or use an immersion blender and blend until very fine.

Serve topped with cheddar cheese if desired or plain. I also have sprinkled a little red pepper flakes in mine when I eat it. It is very filling!
You can freeze it in one serving packages, which was one of my favorite lunches while I was in my school years or in meal sizes.
