These are some of our favorite oatmeal cookies that we made over and over again growing up.

Oatmeal butter crisps

2 c. oil 2 c. brown sugar

1 c. white sugar

2 t. vanilla 2 t. salt

2 t. baking powder 2 t. baking soda

4 eggs 3 1/2 c. flour

6 1/4 c. oatmeal 1/2 c. rice crispy cereal 1 c. raisins (You can subsitute nuts, chocolate chips, coconut, craisins, whatever ou like to for the cereal and raisins)

Cream first 7 ingredients

Add eggs. Add flour and oatmeal

Mix well. Add raisins and cereal.

Use cookie scoop to scoop onto trays and bake about 10 min. They should look puffed up and not quite down. Do not take off tray right away, but let stand about 2 minutes before taking them off.

This is a chewy oatmeal cookie. (I cut the sugar down a little, but you can cut it down a bit more if you like).

    Sounds yummy! I usually throw in butterscotch AND chocolate chips. Mmmm… The cereal sounds interesting…I'll have to try that next time.
