Last week went differently than planned because I had a birth to attend and the boys missed some school, so this week, I am trying to catch up. I am not sure how to do that, but we will see! We have been eating awfully well though it seems like.

Wednesday: Middle eastern meal….  I am not sure how authentic this is, but it was in the More with Less cookbook, my favorite cookbook.

Put a salad bowl at each place with a scrap bowl, place cucumber, tomato, green pepper in a bowl, hardboiled eggs and everyone cuts up their own into their bowl. Top with olive oil. Serve with bread, yogurt and hot tea…white cheese like feta if you wish.

Thursday: Balsamic Chicken Noodle Bowl, Salad

Friday: Meatball Subs with French rolls, Tomato salad

I might try this recipe or make my own….sometimes it is good to try someone else’s recipe though.

Saturday: Spaghetti, leftover rolls……salad with lots of vegetables

Sunday: Chicken legs….popcorn, cookies, cabbage salad

Monday: Black beans and rice, salad

Tuesday: Indian food night….I cannot find the recipes I wanted…but this ought to be fun
