Yesterday I took about a pound and half of ground beef and turned it into a large pan of meatballs!

I added about 1 c. bread crumbs, finely ground, 2 eggs, 1 T. onion powder, some parsley, 2 t. minced garlic, and then I threw in a couple T of leftover frozen spinach, the rest of some leftover salsa from lunch and mixed it all up!

Using a cookie scoop I place small balls on a cookie sheet and 2 of theboys rolled them up. I baked them at 350 for about 15-20 min. I froze 2 small bags of them and the other third I mixed with a white sauce and we ate over mashed potatoes!

My husband said they were like his mother made, which is a big compliment and even my 2 year old was gobbling them down!

It is great way to stretch ground beef and to have a quick meal int he freezer, I will do this and then you add them to spaghetti sauce, swedish meatballs, BBQ meatballs or whatever you feel like! I have even added them to soup!
