I made the easiest broccoli soup last night for dinner.

It was really good and when it is easy that makes all the difference!

In a pan I put about 4 c. cut up broccoli, about 1 c. water, and 2 t. Vegeta. I covered it and steamed until tender. Meanwhile I mixed 2 cans evaporated milk and enough milk to make about 4 1/2 cups and added about 5 T. cornstarch and mixed well. I added this to the steamed broccoli very slowly, just a little at a time cooking until it was thickened and bubbly. Then added salt, pepper, a pinch of onion powder and there was dinner!

I usually ad cheese but I had none and you know what? With the evaporated milk it tasted so rich, it didn’t need any cheese. The milk was 2% so not too fattening either!

    Sounds delicious! The only problem is that I keep remembering *my* last batch of broccoli soup…it was burnt on the bottom and completely and totally disgusting! I'll be brave enough to try it again soon…I think…
